Ingredients:
1 cup basmati rice
1 lb chicken or beef, cut into small pieces
1 onion, finely chopped
2 cloves of garlic, minced
1 tsp ginger, minced
1 cup frozen peas
1 cup diced carrots
1 cup diced potatoes
1 cup diced tomatoes
2 cups chicken or beef broth
2 tsp biryani masala
1 tsp garam masala
1 tsp turmeric
1 tsp cumin
1 tsp coriander
1 tsp salt
1/4 tsp pepper
1/4 cup oil or ghee
2 tbsp chopped cilantro or mint
1 tbsp lemon juice
Instructions:
Start by rinsing the rice in a sieve under running water until the water runs clear. Then, place the rice in a pot and add enough water to cover the rice by about 1 inch. Bring the water to a boil, then reduce the heat and simmer for about 18-20 minutes or until the rice is cooked through. Drain the rice and set it aside.
In a large pan or wok, heat the oil or ghee over medium heat. Add the onion, garlic, and ginger and sauté for about 2-3 minutes or until the onion is translucent.
Add the meat and cook for about 5-7 minutes or until it is browned on all sides.
Add the frozen peas, carrots, potatoes, and tomatoes. Stir well and cook for another 5-7 minutes or until the vegetables are slightly softened.
Add the broth, biryani masala, garam masala, turmeric, cumin, coriander, salt, and pepper. Bring the mixture to a boil, then reduce the heat and simmer for about 10-15 minutes or until the vegetables are cooked through and the sauce has thickened.
Stir in the cooked rice, chopped cilantro or mint, and lemon juice. Mix well and cook for an additional 2-3 minutes or until the rice is heated through.
Serve the biryani hot and garnish with additional cilantro or mint.
